Coding is just one part of making apps and games. The other parts are indeed way more visual – for example usually the first part is just drawing elements of the program structure on a whiteboard (or in Visio). There are even formal standards for such “drawings”, like UML.

But, ultimately, when it comes to writing the detailed program behavior specification (sometimes called “source code”), the visual approach is just too much clutter. Text is much more pleasant to look at, and much easier to navigate (on that level of detail that is required for this step). There are languages like LabVIEW or Unreal Engine’s Blueprints, but I doubt anybody much enjoys using them.

There’s also an interesting middle ground, called “projectional editing” – it’s still text, but the editor understands the structure, and allows you to have different views of it (called “projections”). You might want to check out Smalltalk (Squeak, Pharo).
